Honestly ever single class has fantastic solo build options, so if there are any that you are leaning towards because you like them just go for it. If you look up "gw2 (insert class here) open world solo build" you can find tons of very strong builds. That said I think the easiest right now are probably ranger, engineer, guardian, and necro.
Here are the characters I have: 5 Ranger, I had a level 80 Ranger way back when and liked it a lot. My Guardian - the class is entirely new to me and seems like it has a versatile endgame selection of roles. Warrior - the class seems a bit one-dimensional to me, I'm not sure how much fun it would be to take through the leveling process.
But specific builds probably whirling shadowform ranger, vengeful 330 rit, spirit spammer rit, and vos dervish can farm the most varied places. The most diverse profession for farming would probably be ranger as it can trap, use gdw pet boss farming, whirl so many spots and has great running potential.
Tempest, Herald (boon extension) and Chrono (quick, alac + time travel) are the best at this. Druid, Mech and Scrapper, in exchange for the "number" of unique boons, they can bring so many more utility skills.
